Roasted potatoes go well with any meal as an accompaniment; you can have them for breakfast, lunch or dinner. They are healthy, delicious and easy to make.
Potatoes are nutritious. They are a good source of proteins, minerals as well as vitamins which are vital for optimum health. Potatoes contain high contents of potassium, vitamin C as well as vitamin B6.
They also contain high contents of flavonoids and antioxidants which helps to neutralize the effects of free radicals in the body and reduce chronic diseases.
Roasted potatoes are naturally gluten-free; hence are excellent for people who are intolerant to gluten or have celiac disease.
Potatoes are very filling and satisfying; therefore they can help you lose weight if prepared without the addition of unhealthy fats.
Why should you eat roasted potatoes?
Potatoes are generally healthy, but the method used in cooking them can make them unhealthy. For example, deep frying potatoes in saturated or trans fats make them more calorie dense hence can contribute to weight gain.
Roasting potatoes is a healthier alternative as it minimizes the calorie and fat content of this vegetable. Toss them with some healthy oil such as avocado or olive to soften and make them easy to digest.
Do you have to boil the potatoes before roasting them?
Boiling the potatoes before roasting helps to soften them such that when they are roasted, they cook thoroughly and develop an extra crispy texture on the outside but become moist in the inside.
Should you peel the potatoes?
The skin of the potato is healthy as it contains a lot of fiber and nutrients. You can cook them with the peels or peel them if you like. I like eating them with the skin on, but my family loves them when peeled. Please feel free to roast them with or without their skin.

Crispy oven roasted Potatoes
- 2- pound yellow skinned potatoes or any type.
- 1 Tsp Turmeric powder
- 4 Tbsp avocado oil
- 1 tsp Garlic powder
- 1 tsp Cardamom Powder
- Fresh rosemary (optional)
Peel the potatoes and cut them into medium cubes then wash them.
Boil water in a large saucepan then add salt and the potatoes. Simmer for about 8-10 minutes or until the vegetables are slightly tender such that you can poke them with a knife or fork with little resistance. Please do not let them overcook.
Preheat the oven to 425 degrees Fahrenheit. Line the baking sheet on the baking tray.
Combine avocado oil, turmeric, garlic and cardamom powder in a large bowl. Mix well and set aside.
Drain water from the potatoes when cooked and let the potatoes cool for about 1-2 minutes. Transfer them in the infused oil mixture and add a little more salt. Toss and make sure to coat the vegetables thoroughly.
Transfer the potatoes to the baking sheet, separate them by spreading them apart and roast for 20 minutes. Turn and shake them during the cooking and let them cook 10 minutes longer.
Season as desired then garnish with fresh rosemary herb and serve warm. Enjoy!
