Creamy Vegan Mushroom Alfredo

Creamy vegan mushroom Alfredo Sauce requires only a few ingredients and 30 or fewer minutes to prepare.



1 medium white  onion chopped

½ red bell pepper chopped

½ yellow, red pepper chopped

2 garlic cloves minced

2 tablespoon olive oil

1 cup chopped zucchini or asparagus trimmed and cut into short pieces. 

1 cup white sliced mushrooms

Salt to taste


1.Heat the cooking oil in a pan or pot over medium-high heat. Add the onions and cook for 2- 3 minutes, then add minced garlic and cook for another 1-2 minutes.

2.Add the bell peppers and the mushrooms. Let the contents simmer for about 4-6 minutes. Remember to stir the contents occasionally till they are tender.

3.Add the zucchini or asparagus and cook for another 3-5 minutes, occasionally stirring to ensure even cooking and prevent them from burning or sticking to the pot.

4.Pour in the Vegan Alfred sauce and stir to combine well. Cook on low heat for 2-3 minutes.

5.Serve warm.
