This mushroom and vegetable Alfredo is rich and creamy, yet I have not added any heavy cream or cheese to thicken it. It is an excellent option for plant-based/ vegan eaters who are trying to limit their fat consumption.
Mushrooms are healthy; they are rich in vitamin Bs and minerals such as selenium, potassium, iron, and copper. They are healthier compared to red meat since they have fewer calories, fat, and cholesterol.
What goes well with this creamy vegan Mushroom Alfredo?
This dish goes well with rice, mashed potatoes, noodles, or pasta. You can prepare this for lunch or dinner. You can as well prepare it a day before and pack it for your lunch at work.
You can use any mushroom, I have used the white ones, but any such as oyster or shitake will do.
Can you add vegetables to this Alfredo recipe?
I have used red /yellow bell peppers and zucchini in this recipe, but you can add any vegetables you prefer. For instance, you can add asparagus, squash, potatoes, carrots, green beans, or any leafy vegetables. Just make sure you do not overcook them.

Creamy Vegan Mushroom Alfredo recipe
Creamy vegan mushroom Alfredo Sauce requires only a few ingredients and 30 or fewer minutes to prepare.

1 medium white onion chopped
½ red bell pepper chopped
½ yellow, red pepper chopped
2 garlic cloves minced
2 tablespoon olive oil
1 cup chopped zucchini or asparagus trimmed and cut into short pieces.
1 cup white sliced mushrooms
Salt to taste
1.Heat the cooking oil in a pan or pot over medium-high heat. Add the onions and cook for 2- 3 minutes, then add minced garlic and cook for another 1-2 minutes.
2.Add the bell peppers and the mushrooms. Let the contents simmer for about 4-6 minutes. Remember to stir the contents occasionally till they are tender.
3.Add the zucchini or asparagus and cook for another 3-5 minutes, occasionally stirring to ensure even cooking and prevent them from burning or sticking to the pot.
4.Pour in the Vegan Alfred sauce and stir to combine well. Cook on low heat for 2-3 minutes.
