Healthy Vegan Cranberry oatmeal muffins.
Cranberry oatmeal muffins are good for breakfast. They are satisfying and are easy to make even when you do not have a mixed,a spatula will work. I have always wanted to make vegan muffins, but each time I tried,I failed. The results were horrible-either they were uncooked, flat or tasted awful, but I never gave up.I kept trying till I finally was able to get the results I wanted.
These Cranberry oatmeal muffins are great for vegans because they do not have any animal products such as Milk, butter, or eggs and neither do they have refined sugar. In addition to that, you do not need many ingredients to make them, and they are delicious.
These oatmeal muffins contain fewer calories, with little fat hence are good for weight loss .Coupled with that,oatmeal is packed with vital nutrients and is satiating therefore will keep you full for longer. Eat these for breakfast, and you won’t need a midday snack.
1 Cup whole wheat pastry flour.
1 Cup whole grain oat flour or ground whole oats
Two tsp baking powder
1/2 dried or fresh cranberries.I used dried ones
1/4 cup honey
1 cup of Almond milk (I make mine) or any milk
One tsp vanilla
Nonstick olive oil spray
¼ teaspoon ground cardamom (optional)
In a bowl mix the dry ingredients first (Whole wheat flour, oat grain flour, cardamom, and baking powder)
Add the honey and mix well.
Make a small well and add the almond milk and whisk or mix until well mixed. The mixture should be thick but not like that for pastry dough.
If you want them lighter, you can add more almond milk but don’t make it runny.
Add the cranberries and any other nuts of your choice and combine well.
Preheat your oven to 375 F
Spray your muffin tray with nonstick olive oil spray
Fill 7-9 muffin cups with ⅔ of the muffin mixture.
Bake the cranberry oatmeal muffins for about 24 minutes but remember to check often to see if they are cooking right.
When cooked, allow to cool before you serve.
