EASY VEGAN CHICKPEA CORN CHOWDER.
Chickpea corn chowder is one of my favorite recipes. I make it often for our Saturday lunches, and my kids love it. Chickpeas also called garbanzo beans are very healthy; they are high in proteins, vitamins, and fiber.
They can substitute meat in vegan and vegetarian diets. Chickpeas can make a variety of healthy recipes. For instance, you can make stews and soups from them that can be vital in your health.
This chickpea corn chowder is creamy and delicious, coupled with that, you do not have to eat a lot of it because of its high fiber content,just a little is enough to satisfy you. It can keep you full for longer and therefore aid in weight loss.
I like cooking my chickpea corn chowder from scratch using fresh ingredients, and so I start by soaking my chickpea overnight or for 12 hours. Drain the water and cook them until they are soft before I make the chowder dish. This makes them easy to digest. You can as well buy canned or precooked chickpea for your chowder if you like and boil them for a few minutes to soften them.
1 cup cooked or canned chickpea
Half cup Edamame soybeans
I cup or 1 can sweet corn.
One chopped medium onion
Two cloves of minced garlic
1/2 chopped medium red bell pepper
Half chopped green bell pepper.
1 1/2 cashew milk /cream or any milk of your choice.
2 tbsp. olive oil
One tablespoon fresh parsley leaves
How to make.
Heat olive oil in a cooking pot
Add chopped onions and minced garlic.
Let these cook for few minutes on medium heat, until the onions start to brown.
Thereafter,add chopped red and green bell pepper; occasionally stir, until they start to soften.
Add the chickpea, corn, and soybeans and stir while cooking for 5 minutes covered.
Pour cashew milk and bring to boil.Reduce the heat and cook uncovered for 10-15 minutes.
Simmer until the soup thickens to the consistency you like.
When ready,add salt to taste and garnish with fresh parsley leaves or any garnish of your choice.
Cooking chickpeas from scratch can take time.To reduce the cooking time,soak them overnight since without doing so ,they will take long to cook,then cook until they are soft. This will save time.
